One Pan Green Banana Flour Pancake
A nutrient packed green banana flour pancake with only a few ingredients. A great banana pancake that is a delicious way to start the day. A great recipe for kids too as it will keep them fuller for longer. It has protein, a great source of potassium, is anti-inflammatory, gluten free and high in resistant starch.
Green banana flour has a smooth texture and more of an earthy flavour.
INGREDIENTS
1 banana mashed with a fork
1 egg beaten
1 Tbs banana flour
½ tsp ceylon cinnamon
Optional
raspberries or blueberries

METHOD
1. Turn the oven to a medium heat on grill option.
2. Heat a small pan with ghee or oil of choice.
3. Mix the egg with the banana then add in the banana flour and cinnamon, mix until well combined.
4. Add the mixture to the heated pan and cook for approx. 2 minutes. If adding berries do so at this stage.
5. Switch off the heat and transfer to the oven and grill for approx. 5 mins or until the pancake has cooked through.
6. Transfer to a plate and serve with your favourite topping.
