Grain Free Tabouli Salad
I finally got around to making tabouli salad I have been craving lately, and have fond memories of eating when I was younger.
I grew up in the best multicultural street where neighbours would happily share food they had made on the day.
My Lebanese next door neighbour would always come over with the best tabouli salad everytime she made a big batch for a family gathering.
I loved packing the tabouli into the freshest white bread roll (those where the days 😂)with the juices just soaking the bread and dripping down my arms.
I could just easily eat that and be content for the rest of the day.
This is my grain free and fodmap friendly version and still just as delicious how my neighbour made it.
INGREDIENTS
2 bunches fresh parsley
½ cup fresh mint
2 small or 1 large cucumber deseeded and chopped into small cubes
½ cup tomatoes deseeded and finely diced
1/3 cup hemp seeds
¼ cup extra virgin olive oil
¼ cup freshly squeezed lemon juice
Salt to season

METHOD
1. Wash and completely dry the parsley and mint. Using a sharp knife chop them very finely or use a food processor and pulse until chopped very small but not into a paste.
2. Place the parsley and mint in a large bowl with the tomatoes, cucumber and hemp seeds and mix.
3. When you’re ready to serve the salad add the olive oil and lemon juice. Mix well and season to taste.
4. Serve as a side with any main meal.
