Vanilla Coconut Ice Blocks
These vanilla coconut ice blocks are quick and easy to make. Keep a stash in the freezer as they’ll come in handy on those hot summer days. They are dairy and refined sugar free.
INGREDIENTS
½ cup coconut milk (from can not carton)
¼ cup coconut yoghurt
2 egg yolks
2 tbsp raw honey
½ vanilla bean powder
Optional
Melted chocolate
Crushed nuts
METHOD
1. In a small bowl beat the eggs for 2 -3 minutes.
2. Add the rest of the ingredients to a blender and blitz for 30 seconds.
3. Add the mixture to the bowl with the eggs and gently fold until well combined.
4. Pour the mixture into moulds and freeze for a minimum of 4 hours before eating. Leave out of the fridge for 5 minutes to soften if needed.
5. Once set you can drizzle some melted chocolate and crushed nuts.
