Pear & Blueberry Baked Oatmeal
This Pear & Blueberry baked oatmeal is an easy breakfast recipe that I like to prepare and bake the night before as it comes in handy on those busy mornings. Once baked and cooled, place it in the fridge. Slice up and re-heat it the next day.
In the morning it only needs to be reheated. You can also add your favourite milk or yogurt if you prefer. Its a healthy and satisfying breakfast for the whole family. You can easily swap out the blueberries for other berries or even banana. Pears can also be swapped out for apples.
Ingredients
1 cup gluten free oats
1 cup milk of choice
2 eggs, beaten
2 tbsp maple syrup
1 tsp cinnamon
¼ tsp ground ginger
1 pear cored and thinly sliced
1 cup of blueberries, fresh or frozen
Optional Extras
1 tsp coconut sugar
½ tsp Cinnamon

Method
1. Soak oats minimum of 5 hours or overnight in enough water to cover them with a pinch of salt.
2. Drain and rinse thoroughly.
3. Preheat oven to 150ºC.
4. In a bowl mix all the wet ingredients and then add them to the bowl with all the dry ingredients. Mix and lastly fold through the blueberries.
5. Pour mixture into a lightly oiled baking dish and top with the pear slices. If you want to caramelise the pears slightly, mix together the optional extras and sprinkle over the pears.
6. Bake for 40-50 minutes.
7. Serve warm.
This can be made in advance and re-heated the next day. Add extra milk if preferred.
