Spinach and Halloumi Tart
This spinach and halloumi tart recipe is my cheat’s version of spanakopita, making it without the pastry so its gluten free. It makes an easy lunch, breakfast or even as a side dish to a main meal. You can use other cheeses if you like but for me halloumi cheese is one of the only cheeses I liked to eat.
Ingredients
½ large onion or 1 small onion, diced
1 bunch silverbeet, washed, dried and chopped
juice from ½ a lemon
½ tsp garlic powder
½ tsp sumac
4 eggs lightly beaten
Pepper
250g halloumi, diced
Oil, butter or ghee

Method
1. Pre-heat oven to 150°C
2. Heat a small pan with oil on low to medium heat and sauté onion until translucent. Add spinach, pepper, garlic powder, sumac, lemon juice and cook for approximately 10 minutes or until the spinach has wilted.
3. Switch off heat and stir through the chopped halloumi. Taste and add salt if needed. Generally I eliminate it as halloumi cheese can be quite salty. Season with pepper.
4. Add mixture to a lightly oiled pie dish. Pour beaten eggs on top of the filling.
5. Place in the oven and bake for approximately 30 minutes.
