Chocolate Peanut Butter Chews
Who doesn’t love the flavour of dark chocolate and peanut butter with a touch of saltiness. I’m obsessed with this combo. It’s like a marriage made in heaven.
You won’t feel guilty eating more than one as they are refined sugar free and made with raw cacao. So much goodness in a little treat.

BASE AND TOP LAYER INGREDIENTS
¼ cup melted cacao wafers/buttons
¼ cup cacao powder
¼ cup coconut sugar
¼ cup coconut oil
pinch of salt

FILLING INGREDIENTS
1/2 cup peanut butter
1 tbsp maple syrup
¼ cup cacao butter wafers/buttons

METHOD
1. Line a muffin tin with mini cupcake bases and set aside.
2. For the chocolate, melt the cacao buttons with coconut oil in a saucepan over low heat. Once melted add the coconut sugar, cacao powder and pinch of salt. Stirring frequently until the coconut sugar has dissolved.
3. Then add 1 teaspoon to the bottom of each case and place in fridge until set. Save the remainder of the chocolate aside. This will be used for the top layer later.
4. In another saucepan add all ingredients for the filling on low heat and stir until they have melted.
5. Take the muffin tin out of the fridge and add 1 tablespoon of the filling on top of the set chocolate. Then place back in the fridge to set.
6. Once the filling has set, place the remainder of the chocolate, 1 teaspoons in each case to form the top layer. You may need to re-heat the chocolate slightly if it has cooled. Sprinkle with some salt flakes.
7. Keep refrigerated until serving as they will melt easily from the coconut oil.
8. These will also keep well in the freezer until you need them.
