FLUFFY & RICH MINI CHOCOLATE SOUFFLES
These mini rich chocolate soufflés are gluten free, healthy as well as deliciously fluffy, gooey and sure to be a crowd pleaser.

INGREDIENTS
1 cup coconut yogurt
2 eggs
½ cup raw cacao
½ cup coconut sugar
1 tsp baking powder
METHOD
1. Preheat oven to 150ºC
2. In one bowl mix all the dry ingredients and set aside.
3. In a seperate bowl beat the eggs until light and fluffy, then stir through the coconut yogurt.
4. And to the dry ingredients and mix well until all the ingredients are well combined and there are no lumps.
5. Divide mixture evenly into ramekins approximately 3/4 from the top.
6. Put the ramekins in a baking dish and water to the dish so it comes up approximately halfway up the ramekins to create a water bath.
7. Place the baking dish in the oven and cook for 15-20 minutes depending no how gooey you want them,
8. Allow to cool for 10 minutes and serve warm with cream or ice cream.
Makes enough mini chocolate soufflés for 5 ramekins
