Lemon, Ginger & Honey Gummies

These lemon, ginger and honey gummies are super healthy and perfect to keep the bugs at bay when winter season hits. They are super easy to make using real lemon juice and without any sugar. Store bought gummies contain high sugar, artificial flavours and dyes which wreak havoc on the gut.

The lemon, ginger and honey gummies also make a great snack that kids and adults will love which are great for the gut and skin from the added benefit of including a great quality grass fed gelatin.

You don’t need fancy moulds if you haven’t got any. Any container will be do. Once the liquid has set you just slice them up into little squares.

It’s important to add the honey after the mixture has cooled slightly. Raw honey has many beneficial medicinal properties and heating it will destroy the quality of the nutrients and enzymes. As a rule of thumb it’s best to keep honey under 60°C.

Ingredients

½ cup freshly squeezed lemon juice

½ cup water

¼ tsp ground ginger

1 tbsp organic raw honey

4 tbsp grass fed gelatin plus 1/3 cup water to bloom

Method

1. In a small bowl add the gelatin and the 1/3 cup of water and allow to bloom for 5 minutes.

2. Meanwhile in a small pot, gently heat the lemon juice, water and ground ginger and heat to just boiling point then switch off. Allow to cool for 5 minutes.

3. Add the gelatin to the pot and stir until it has has completely dissolved.

4. Finally stir through the honey.

5. Pop the mixture into your favourite moulds and put into the fridge to set for a minimum of 4 hours.
