Salted Caramel Chocolate Chews
These delicious salted caramel chocolate chews are based on my peanut butter chews. Making them nut free by using tahini so no one has to miss out on a healthy treat. They are delicious, gluten and dairy free.
BASE AND TOP LAYER INGREDIENTS
¼ cup cacao butter wafer/buttons
¼ cup cacao powder
¼ cup coconut sugar
¼ cup coconut oil
pinch of salt

FILLING INGREDIENTS
¼ cup tahini
2 tbsp maple syrup
¼ cup cacao butter wafers/buttons

METHOD
1. Line a muffin tin with mini cupcake bases and set aside.
2. For the chocolate, melt the cacao buttons with coconut oil in a saucepan over low heat. Once melted add the coconut sugar, cacao powder and pinch of salt. Stirring frequently so the coconut sugar can dissolve.
3. Then add 1-2 teaspoons to the bottom of each case and place in fridge until set. Save the remainder of the chocolate aside. This will be used for the top layer later.
4. In another saucepan add all ingredients for the filling on low heat and stir until they have melted.
5. Take the muffin tin out of the fridge and add 1 tablespoon of the filling on top of the set chocolate. Then place back in the fridge so it can set.
6. Once the filling has set, place the remainder of the chocolate, approximately 1-2 teaspoons in each case to form the top layer and sprinkle with some salt. You may need to re-heat the chocolate slightly if it has cooled.
7. Keep refrigerated until serving as they will melt easily from the coconut oil.
8. These will also keep well in the freezer until you need them.
