SUMMER CITRUS SALAD
Summer may be over, but these hot and humid days calls for a refreshing salad.
This summer citrus salad with fresh oranges gives a burst of freshness and some texture with the added crunch of almonds and pomegranate seeds.
Served with a delicious citrus dressing to tie it all together

INGREDIENTS
1/4 head of green cabbage, shredded
2 cups cos lettuce, roughly chopped
1 orange peeled and segmented
1/3 cup organic almonds (preferably activated)
1/3 cup mint leaves, stems removed
Dressing
1/4 cup extra virgin olive oil
1/4 cup freshly squeezed orange juice
3 tsp rice vinegar
2 tsp maple syrup
2 Tbs pomegranate molasses
1/4 celtic sea salt
Ground black pepper
METHOD
1. In a glass jar add all of the dressing ingredients. Pop the lid on and shake to combine. Set aside
2. In a large bowl or platter combine all the salad ingredients. Set the salad aside in the fridge until you are ready to serve.
3. Just before serving give the dressing another shake and pour over the salad. Give the salad a good toss.
4. Taste and add any extra seasoning if needed.
