Zucchini & Haloumi Fritters

Super easy gluten free Zucchini and haloumi fritters. I just love the saltiness the haloumi adds to the fritters.
They are perfect to be added to kids lunchbox, eaten for breakfast with eggs, or served as an appetiser or side dish with your favourite dipping sauce.

Fritters

INGREDIENTS

1.5 cups zucchini, grated

160 grams haloumi, grated

1/2 cup chopped parsley

1/2 cup buckwheat flour

3 eggs, beaten

1/2 tsp salt

Pepper

Olive oil 

Dipping sauce (optional)

METHOD

1. After grating the zucchini squeeze out as much moisture as you can.

2. In a bowl, add the rest of the ingredients with the zucchini and mix well.

3. Heat a pan with oil over medium heat. I used a combination of ghee and olive oil.

4. Scoop 1/4 cup of the mixture into the pan and press lightly into rounds. Cook on each side for 2 to 3 minutes or until lightly golden brown.

5. Transfer the fritters to a plate lined with a paper towel and sprinkle extra salt if needed.

6. Serve the fritters with avocado dip or sour cream.
